Beef Stroganoff
Beef Stroganoff
Serves 4-6 people
Ingredients:
30gr. butter (or more as needed)
60 ml canola oil (or more as needed)
2lbs beef stew meat
2 medium onion julienned
500gr. mushrooms, quartered
10ml minced garlic
250ml red wine
500ml stock or water
30ml dijon mustard
15ml tomato paste
5ml dried thyme
25gr. cornstarch
250ml sour cream
340gr. egg noodles; cooked and drained
Directions:
Heat butter and oil in thick bottomed pot
In batches, brown beef till well caramelized, seasoning beef with salt and pepper
Once all beef is browned, reserve in a bowl, and add more oil and butter to pot if necessary
Add mushrooms and onions, cook till soft; add garlic, cook 2-3 minutes
Deglaze pan with wine; add stock, tomato paste, mustard, and thyme. Brine to a simmer (remove 80ml broth a set aside for cornstarch slurry) and cover
Gently simmer till fork tender, 2-3 hours.
Mix the reserved 80ml broth with cornstarch and stir into stroganoff; simmer 2-3 minutes
Add sour cream, mix well; add noodles, mix and serve
