Fettuccine with pancetta and basil in a candied garlic tomato sauce with fresh mozzarella

Serves 4-6

For pasta:

1 recipe pasta dough, rolled out for fettuccine (see video)

For sauce:

15ml olive oil

150gr. dice pancetta

1 liter tomato sauce (we have a great candied garlic tomato sauce on Cooking Beyond Recipes)

salt, pepper, and chilies to taste

125ml packed basil chiffonade

225gr diced fresh mozzarella (fiore di latte)

Directions:

Crisp pancetta in olive oil

Add tomato sauce sauce, season, bring to a simmer

Add cooked fettuccine and stir

Add basil and mozzarella

Serve
