Rich egg pasta dough

Pasta dough

1 ½ cups flour

1 ¼ cup semolina flour

6 egg yolks

4 whole eggs

15 ml extra virgin olive oil

1 tsp salt

15 ml milk

Place flour and semolina in a bowl, make a well in center. Put remaining ingredients into well and whisk with a fork. Slowly begin incorporating the egg mixture into the flour mixture using the fork. Once you have a loose dough, dump onto counter and knead for several minutes till you have a smooth dough. Cover, and allow to rest, (minimum 1 hour)
