Southwestern breakfast scramble
Serves 2-4
Ingredients:
30ml canola oil
4 slices bacon, diced
1 large sweet pepper diced
1/2 small red onion diced
30gr. butter
750ml peeled, diced, and cooked potatoes
15ml southwestern spice blend
4 eggs, whisked
salt and pepper to taste
80ml shredded cheese mix
1/2 tomato, diced
1/2 avocado, diced
1 small jalapeno, sliced
80ml sour cream
80ml salsa
Directions:
Add oil and bacon to pan, slowly heat up to allow fat to render
Once bacon fat has rendered, and bacon starts to crisp up, add the sweet peppers and onions. Saute till soft.
Add butter, melt, and when hot and bubbly, add potatoes. Sauté 3-5 minutes
Add spice blend, sauté 2-3 minutes
Add eggs, stir continuously till cooked
Turn of heat, top with cheese, and cover for 1-2 minutes till cheese melted
Remove lid and top with tomato, jalapeno, avocado, salsa, and sour cream
Serve family style!
