Ricotta gnocchi with spiced chicken, purple baby brassicas, and cauliflower alfredo

Serves 2-3

Ingredients:

750gr. chicken breast, diced

15ml cajun spice mix

15ml canola oil

30ml butter

100gr. chopped baby brassicas

2 garlic cloves, minced

750ml Cauliflower alfredo (recipe available on our Cooking Beyond Recipes membership site)

800gr. gnocchi (recipes available on our Cooking Beyond Recipes membership site)

salt and pepper

freshly grated parmesan cheese

Directions:

Combine chicken, cajun spice, and oil; allow to marinated several hours in fridge

Heat butter in pan, add chicken and brown well. Remove chicken and set aside.

If pan dry, add another 15 - 30ml oil or butter and heat

Add chopped baby brassicas and and sauté till lightly roasted; season with salt and pepper

Add garlic, sauté 2-3 minutes

Add Alfredo and bring to a simmer
