Spice rubbed pulled pork with beer bbq sauce
For pork:
1 3-4lb pork shoulder
125ml Your Favorite Pork Rub Spice blend (available through our website site)
1 tall can beer
For sauce:
30ml canola oil
1/2 large onion, diced
180ml ketchup
45gr. honey
45gr. brown sugar
15ml pork rub spice mix
15ml apple cider vinegar
15ml grainy mustard
reserved cooking broth
salt and pepper
Directions:
For pork:
Generously rub pork with spice mix and place in crockpot. Add beer, cover, and cook on low 6-7 hours till tender. Remove meat, pull apart, and store in fridge overnight. Pour broth into container, and store in fridge overnight for fat to solidify.
Next day add pork to crockpot. Make sauce by sauting onions in oil till soft. Combine onions with remaining sauce ingredients. Pour over pork, cover, and reheat on high. Remove lid for final 30 minutes to thicken sauce.
