Italian spiced pork and sun dried tomato meatballs

Yields: 12-13 2oz meatballs

Ingredients:

30ml olive oil

50gr finely diced onion (approx 1/4 of a large onion)

1-2 garlic cloves, minced

15ml Your Favorite Italian spice blend

1lb ground pork

85gr. breadcrumbs

60gr. chopped oil packed sun dried tomatoes ( approx 80ml or 1/3 cup)

80gr. ricotta cheese

Directions:

Heat oil, saute onions onions till soft, add garlic and spuce blend, sauté another 2 minutes. Cool

once cool, combine with remaining ingredients and mix well. For into meatballs.

Freeze for later use, or use fresh in your favorite sauce!
