Herb and garlic crusted leg of lamb; parmesan olive oil mashed potatoes

Serves 4-6

For lamb and crust:

1 boneless leg of lamb (approx. 3lbs)

80ml breadcrumbs

30ml of Your Favorite Italian spice blend

2 minced garlic cloves

30ml olive oil

60ml Dijon mustard

-combine bread crumbs, spice blend, garlic, and olive oil in a bowl

-brush lamb with Dijon mustard, and roll in crumb mixture

-place in roasted pan and cook in a preheated 375 degree oven till internal temperature reads 130 degrees; allow to rest 10-15 minutes before slicing

For potatoes:

3lbs potatoes, peeled and quartered

4 lg garlic cloves, peeled

125ml shredded parmesan cheese

80ml olive oil

Reserved boiling water

Place potatoes and garlic in salted water; bring to a boil and simmer till tender. Reserve some of the liquid and drain potatoes

Add oil to potatoes and mash; fold in cheese, season with salt and pepper

Use reserved water to adjust consistency if needed
