Gin marinated olives
Yields 950gr. (approx. 1250ml)
Ingredients:
785gr. assorted olives (pitted or unpitted, its up to you)
80ml olive oil
80ml gin
juice and zest of 1 lemon
5ml focaccia dipping sauce spice mix
8gr. sliced garlic
Directions:
Place all ingredients in a pot; bring to a simmer
Simmer gently 2-3 minutes; remove from heat and cool
Allow to sit in fridge at least several hours for flavors to develop
These will keep several weeks, covered, in fridge
