Cheese steak sloppy joe

Yields 4-6 (depending on how high you pile the mix!)

Ingredients:

30gr. butter

1/2 medium onion, diced

1 small pepper, diced

1 portobello mushroom, diced

2.5ml minced garlic

15 gr. steak spice (approx. 1.5T)

15ml flour

30ml HP Sauce

15ml Lea and Perrins

250ml beef broth or water

454gr. ground beef

15ml tomato paste

160 gr. sliced cheese ( I like a nice aged cheddar)

4-6 kaiser or brioche buns

Directions:

melt butter; add onions, peppers, and mushrooms, sauté till soft

add steak spice, salt and pepper; sauté 2-3minutes

add flour to create a roux, cook 1-2 minutes

slowly add broth; whisking after each addition. Add tomato paste, HP, and L&P.

bring to a simmer, add beef, break up with a potato masher

simmer 15-20 minutes till thick

divide cheese among bottom half of buns and place in a preheated 350 oven to melt. Through in the tops a swell to toast.

remove from oven and ladle sloppy joe mix over melted cheese bottom. Top with toasted top halves

enjoy! (I prefer to make the sloppy joe mix a day ahead of time to allow the flavors to develop)
